GROUND PORK PEANUT BUTTER
COOKIES
1/2 lb. ground pork 1 cup lard
1 cup sugar 1 cup brown sugar 2 eggs (well beaten) 3 cups flour 2 teaspoons baking soda 1/2 teaspoon cinnamon 1/2 cup peanut butter 1/2 cup nuts (which ever kind you like) 1/2 cup orange rind (shredded) Brown ground pork: drain grease, and set aside. Cream
lard, white & brown sugars, and eggs. Add flour, baking soda,
cinnamon. Blend in peanut butter, nuts, and shredded orange
rind. Stir in ground pork. Shape into small balls on greased cookie sheet.
Press down with fork dipped in sugar. Bake at 350 for 10 min. - about the time it takes to
listen to tracks 1-3 on our record! Makes about 5 dozen
cookies. What you don't eat right away, either keep in the fridge or on top the beer keg
DUMP CAKE One 8 ounce can crushed pineapple, drained, save juice One 21 ounce can cherry pie filling One package yellow cake mix (the kind without pudding) Two sticks oleo, melted Coconut, shredded Pecans, chopped Lightly grease up a 13 x 9 inch pan. Dump the pie filling in pan. Spread evenly. Dump the pineapple over that. Spread that out. Next, dump the cake mix in evenly. Work out the lumpy bits. Pour melted oleo and pineapple juice evenly over the whole mixture. Sprinkle with coconut and nuts. Bake in the oven at 350° for 1 hour OR on tour bus engine at 65 mph for 5 hours.
